Rose Hip Marmalade
Recipe
Ingredients:
500 g Rose Hip
200 g Caster Sugar
1 Cinnamon stick
1 Zest of a lemon
Water to cover
Method
1.Sterilize a glas jar in the oven
2.Discard the ends. Cut the rose hip in half. Scrape out the seeds.
3.Rinse and discard all the thistle and seeds.
4.Chop the rose hips roughly.
5.Place the chopped rose hips in a medium large pot.
6.Add lemon zest, cinnamon and water.
7.Bring the mixture to a boil, boil until soft, about 20-30 min.
8.Pass the mixture through a fine mask sieve if you like a smooth jam.
9.Pour into a sterilised jar. Leave to cool.
Enjoy your rosehip marmalade on your scones for the after-noon tea.
